Pack a Brave inspired lunch full of adventurous flavor, complete with bow, arrows, bear -- and even locks of Merida's fiery hair! Enjoy this easy and delicious recipe from our friends at Magic of Healthy Living. Ingredients: •3 oz salmon, precooked •1/4 cup carrots, chopped • 1 carrot, peeled •¼ cup cucumber, chopped •¼ cup plain greek yogurt •1 tbsp parsley, chopped •½ tsp garlic, chopped •1 tsp lemon juice •1/8 tsp salt •1/8 tsp pepper •6 asparagus spears •1 bell pepper slice •1 tsp sesame oil •1/8 cup raisins •1/2 apple, sliced •1 tsp honey •4 whole-wheat crackers •1 sheet nori, small Steps: 1. For the salmon salad, in a large bowl mix together the salmon, chopped carrots, cucumber, garlic, parsley, lemon juice, yogurt, salt and pepper. 2. For the carrot ribbon salad, make carrot ribbons using a veggie peeler and place them in a bowl of ice water for a few minutes to curl. Drain water and toss ribbons with sesame oil and raisins. 3. To make asparagus arrows, trim the spears to fit the box and slice in half lengthwise. Slice a bell pepper to make the bow. 4. For a healthy dessert, slice half an apple, place in box and drizzle with honey. 5. Now make your salmon salad look like a bear! Use an ice cream scoop and add a scoop of the salmon salad to your bento box. Tuck the whole-wheat crackers into the scoop to form ears. Place a cucumber round on top of the salmon salad to form a nose and mouth. Use carrot rounds for eyes, nori to make a mouth and a raisin for the nose.  http://www.youtube.com/playlist?list=PL7CA4CB7DB6667D31 INGREDIENTS: (Berry Pops): ½ Cup pre-sliced mixed fruit ½ Cup plain greek yogurt 1-Tablespoon honey 6 carrot sticks (or wooden stick or whole wheat pretzel) INGREDIENTS (Sorbet): 1 Pre-sliced banana ½ Cup coconut milk ½ Cup apple juice ½ Cup mixed berries INSTRUCTIONS: For the berry pops, take a bowl and mix together - fruit and plain Greek yogurt. Then pour the mixture into paper cups. Insert a carrot stick into each fruit mixture. Freeze for about an hour and serve. For the sorbet, mash a banana in a bowl with a fork. Then add coconut milk, honey, apple juice, and mixed berries. Mix so everything is evenly distributed. Freeze mixture within the bowl for 1 hour. Then scoop and serve. Preheat your oven to 350 degrees. 2. Wash your apples and core with a melon baller, being careful not to go all the way through to the bottom. With a vegetable peeler, remove the top half of the apple's skin and place them in a baking dish. 3. In a bowl, mix together the oats, brown sugar, almonds, apricots, cranberries, light coconut milk, cinnamon, nutmeg and cloves. 4. Fill each apple with the oat mixture and bake in your preheated oven for 35-45 minutes or until the apples are soft. Let cool for 15 minutes and enjoy! Start a pot of boiling water. 2. In a large bowl, add mashed potatoes, flour, parmesan cheese, chopped parsley, paprika, nutmeg, salt, pepper and the egg. Knead the mixture until it becomes dough and then form into a ball. 3. On a cutting board, roll the dough out into a snake roll about the thickness of your finger. 4. Use a fork to cut the roll into ½ inch pieces. Now let's make some 'grubs' out of our gnocchi! 5. Take the gnocchi and roll them down the tines of a fork. Looks like a grub, doesn't it? 6. Drop the gnocchi into your boiling water. When they float to the top they are done. Place gnocchi grubs on a tray and set aside. 7. In a sauté pan over medium high heat add olive oil and sauté your blanched broccoli and cherry tomatoes for 3-5 minutes. 8. Next, add your cocktail shrimp to the broccoli and tomatoes and cook for another 2-3 minutes. 9. Add your grubs to the pan and cook for 2-3 more minutes. 10. Plate and enjoy! Servings: 4-6

In large sauté pan over med high heat, add oil, onions and garlic. Sweat for 3-4 minutes or until onions become soft. 2. Next add eggplant, zucchini, squash, red pepper, thyme, salt, pepper and sauté for another 6-9 minutes. 3. Add crushed tomatoes to the pan and stir. Cover with lid and cook for 6-9 minutes or until the vegetables soften. 4. Use a spoon to make 4 wells in the ratatouille and drop an egg in each spot. 5. Cook the eggs for 4-6 minutes or until they are done to your liking. Enjoy! Servings: 4
